Substitutions for baking and cooking ingredients. This was adapted from Baking
101, Good
Cooking, and PETA.
DRY INGREDIENTS:
Cake flour (1 cup)
1 cup all-purpose flour less 2 tbsp. Stir in 2 tbsp conrstarch.
Self-rising flour (1 cup)
1 cup all-purpose flour + 1/1/2 tsp baking powder and 1/2 tsp salt
Packed brown sugar (1 cup)
1 cup granulated white sugar + 2 tbsp molasses or dark corn syrup
Granulated white sugar (1 cup)
1 cup packed brown sugar
Granulated white sugar (1 cup)
3/4 cup honey; reduced other liquid in recipe by 1/4 cup OR add
1/4 cup flour if there is no other liquid in the recipe
Granulated white sugar (1 cup)
1 cup packed brown sugar
Granulated white sugar (1 cup) - for recipes other than baked
goods
2 cups sifted powdered (confectioners') sugar
Sifted powdered (confectioners') sugar (1 cup)
1/2 cup granulated white sugar
Cornstarch (1 tbsp)
2 tbsp all-purpose flour
Baking powder (1 tsp)
Mix together 1/2 tsp baking soda + 1 tsp cream of tartar, then
measure out 1 tsp. Throw out the unused mixture.
LIQUID INGREDIENTS:
Milk (1 cup)
1/2 cup evaporated milk plus 1/2 cup water
Buttermilk or sour milk (1 cup) - for baking only
1 tbsp vinegar or lemon juice plus enough milk to equal 1 cup
Heavy or whipping cream (1 cup) - for baking, not whipping
3/4 cup whole milk + 4 tbsp butter
Light cream (1 cup)
7/8 cup (7 oz) milk + 3 tbsp butter
CHOCOLATES:
Unsweetened chocolate - 1 square (1 oz)
3 tbsp unsweetened cocoa powder + 1 tbsp butter, margarine, or
shortening
Semisweet chocolate - 1 square (1 oz)
1 square unsweetened chocolate + 1 tbsp sugar
HONEY (1 cup)
1 1/4 cup sugar +1/4 cup water
BUTTER/MARGARINE:
1 tsp of butter/margarine = 3/4 tsp oil
1 tbsp of butter/margarine = 2 1/4 tsp oil
1/4 cup of butter/margarine = 3 tbsp oil
1/3 cup of butter/margarine = 1/4 cup oil
1/2 cup of butter/margarine = 1/4 cup oil + 2 tbsp
3/4 cup of butter/margarine = 1/2 cup oil + 1 tbsp
1 cup of butter/margarine = 3/4 cup oil
EGGS (for Vegans):
1 Egg (Savory dishes) - recommended
Puree 1/4 cup soft tofu
1 Egg (Sweet goods) - recommended
1 banana or 1/4 cup applesauce
1 egg = 2 tbsp potato starch
1 egg = 1/4 cup mashed potato
1 egg = 1/4 cup canned pumpkin or squash
1 egg = 1/4 cup pureed prunes
1 egg = 2 tbsp water + 1 tbsp oil + 2 tsp baking powder
1 egg = 1 tbsp ground flax seed simmered in 3 tbsp water
1 egg white = 1 tbsp plain agar powder dissolved in 1 tbsp water,
whipped, chilled, and whipped again
