It takes a little effort and time to do this, but it's fun and very easy. You can use this to your homemade tomato sauce, stews, pizza, salsa, or any dish that needs peeled or seeded tomatoes.
EQUIPMENT NEEDED:
Pot
Slotted spoon or tong
Thin bladed knife or paring knife
Bowl of water with ice or a bowl of cold water
Strainer
PROCEDURE:
1. Score the bottom of each tomatoes using a thin bladed knife or paring knife (some put an X mark but in my case, I just slit it). Bring a pot of water to a rolling boil. Gently place 5 tomatoes (if you have large tomatoes, only place 2) at a time into the boiling water. Let the tomatoes boil for less than a minute. Using a tong or slotted spoon, put the tomatoes in an ice bath (a bowl of water with ice) to stop the cooking. Transfer the tomatoes in a bowl. Repeat the procedure for the remaining tomatoes.

2. Carefully peel the thin skin of the tomatoes starting where it has been scored.
3. To seed the tomatoes, cut it in half then scoop out the seeds. Reserve the liquid and seeds.
4. Strain the reserved liquid and seeds to get the tomato juice. Reserve the juice for future use.
